Wine Gums

I like to put these on the table after dessert has been cleared. It creates a fun and unexpected shift that the meal is not quite over, there is yet another surprise.

Search for “silicone gummy molds”, many come with the plastic eyedropper. I like molds that look like cut gems and jewels. My molds are approximately 1” each in size and have five rows of three per silicone sheet.

I add a few drops of yellow food coloring to the saucepan of wine gelatin and fill a few molds. I add a few more drops to deepen the color to fill the next few molds. I continue with the red food coloring, adding a few drops and filling a few molds. Sometimes I’ll add one or two drops of the deeper red color to the first, yellow molds to give a dappled effect.

This gives me varied hues of colored gums to display on a silver tray or cut glass candy dish.

If you have higher expectations, you can infuse your wine gums with cannabis. I am not skilled in making recommendations for ratios of CBD/THC or amounts of tinctures to add. Google may be your friend if you’d like to enhance your gums. I would suggest using a cannabis leaf mold and possibly green food coloring to indicate the additional punch to any unsuspecting person.

This recipe fills about 45 1” gum molds, or three sheets of 15 molds.

Ingredients

Equipment

Saucepan
Gum molds
Eyedropper

Ingredients

½ cup sugar
3 ounces powdered gelatin
1 cup unoaked white or rosé wine
Red and yellow food coloring

How To Make

1
Place sugar and powdered gelatin in the saucepan and whisk to mix.
2
Add wine and place over medium-low heat. Whisk for two minutes to dissolve sugar and gelatin into wine.
3
There may be a small layer of white foam that you can remove with a rubber spatula.
4
Add a few drops of yellow food coloring and stir to combine.
5
Using the eyedropper begin filling your molds, starting with about the first nine.
6
Add a few drops of red food coloring to the wine gelatin mixture and stir. You are building deeper and deeper colors to add to your molds, giving you a variety of hues. Fill another nine molds. Repeat adding coloring and filling the molds until complete.
7
Refrigerate for an hour to set the gelatin. Gums will release from the molds easily and will keep for a week.
