Candied Orange Peel

Cut to remove the base and the top of the oranges, creating a flat surface on each side.


Standing the orange on its flat bottomed surface, use the middle of the chef knife to slide from the top to the bottom, just removing the peel. Continue by rotating the orange and removing more peel.


Slice the peels into strips and dice the strips.


Fill the saucepan with water and bring to a boil. Simmer orange peel for one minute, drain. This will remove bitterness.


Add sugar and 1 cup water to the saucepan over medium heat. Stir until sugar is dissolved. Add orange peel, reduce heat and simmer for ten minutes. With a slotted spoon, remove orange peel to a small bowl. Reserve the orange simple syrup for another use (cocktails?)
  • 2 medium oranges
  • 1 cup sugar, plus more for coating if using as a garnish
  • 1 cup water
