Candied Orange Peel

Cut off the base and top of the oranges to create flat surfaces. Stand the orange on one flat side, then use a chef’s knife to slice from top to bottom, removing the peel. Rotate the orange to continue removing the peel. Slice the peels into strips, then dice them.

In a saucepan, bring water to a boil. Simmer the orange peel for one minute, then drain to remove bitterness.

In the same saucepan, add sugar and 1 cup of water over medium heat. Stir until the sugar dissolves, then add the orange peel. Reduce the heat and simmer for 10 minutes.

Using a slotted spoon, transfer the candied orange peel to a small bowl. Reserve the orange simple syrup for another use—perhaps a cocktail!
